The present invention consists in a novel procedure or the synthesis of 3-hydroxy-2-pyrone, carried out through hydrolysis and heating of a precursor, in a single step, and without chemical reagents.
The process occurs when salts from the precursor are dissolved in water, the solution is then heated under stirring at a temperature between 80- 130 °C and a pressure between 1-5 atm for a time between 1 and 12 hours.
The recovery of the product can be carried out:
- by quantitative extraction from the aqueous solution with organic solvents such as ethyl ether or ethyl acetate, removal of the organic solvents and subsequent purification of the residue by sublimation.
- by lyophilization of the aqueous solution and subsequent purification by sublimation.
The reaction can also be carried out in a two-phase system consisting of water and a water-immiscible organic solvent: in this way the process can be converted into a continuous process. Furthermore, a continuous process limits the degradation of the product and achieves higher yields.
