The present invention consists in a novel procedure or the synthesis of 3-hydroxy-2-pyrone, carried out through hydrolysis and heating of a precursor, in a single step, and without chemical reagents.

The process occurs when salts from the precursor are dissolved in water, the solution is then heated under stirring at a temperature between 80- 130 °C and a pressure between 1-5 atm for a time between 1 and 12 hours.

The recovery of the product can be carried out:

  1. by quantitative extraction from the aqueous solution with organic solvents such as ethyl ether or ethyl acetate, removal of the organic solvents and subsequent purification of the residue by sublimation.
  2. by lyophilization of the aqueous solution and subsequent purification by sublimation.

The reaction can also be carried out in a two-phase system consisting of water and a water-immiscible organic solvent: in this way the process can be converted into a continuous process. Furthermore, a continuous process limits the degradation of the product and achieves higher yields.
